Bunches of thanks to the TV for reminding me! (See, pa? All that watching TV in bed paid off! Kidding!)
I know I should’ve remembered it myself, but I am so used to celebrating Father’s Day on the first Sunday of September - the recognised date of Father’s Day in Australia, my second home.
Anyways, to make the day especially memorable for my dad (also my role model, hero, confidante and favourite person), I made him Tangy lemon curd mousse:
- 10 egg yolks
- 1 cup white sugar
- 3/4 cup freshly squeezed lemon juice
- 100 g unsalted butter
- 1 tablesppon grated lemon zest
- 1 1/4 cups thickened cream
Mix the egg yolks and sugar in a heavy-based saucepan. Add the lemon juice and butter and heat for about 5 minutes over a low heat, stirring constantly, until it just begins to simmer - do not boil.
Strain mixture through a sieve set over a bowl. Stir zest into sieved mixture, then cover with plastic film and set aside to cool. Once cool, transfer to refrigerator and chill for at least 4 hours (or overnight).
Beat the cream until stiff peaks form (my favourite part!). Fold a third of the cream into the curd mixture until combined, then gently fold in remaining cream until combined.
Spoon mousse into individual serving bowls or glasses and chill, covered, for 6 hours before serving.

As usual, I changed the recipe to suit my own tastes. I didn’t use 3/4 cup of lemon juice, because the lemons were horribly sour. And I added a lot more sugar - I do not encourage this, it’s unhealthy! Also, as you can see from the picture above, in addition to the lemon zest topping, I had chocolate curls, and one of the cocktail glasses with lychee topping especially for my dad.
Here’s a little tip from tad: It’s important while you use the recipe as a guidance, you don’t stick to it COMPLETELY. Make some changes to suit yourself, to suit your family or friends. Play with ingredients.

I was happy with the end result. Glad my dad liked it, too. My mom commented on the amount of lemon juice I put in. It was a bit sour for her, but overall, the dessert was an A!
What should I make next? Rich chocolate mousse? Zuppa inglese? Fried rice with sweet and sour chicken? I really do love cooking!
